THE BEST FALL CHILI

  • 1 lb. Ground Chicken or Turkey
    (Prefer Organic Pasture Raised)
  • 1/2 Red Onion (Chopped)
  • 3 Celery Stalks (Sliced)
  • 3 Garlic Cloves (Minced)
  • 1 tsp Cumin
  • 1 Tbsp Chili Powder
  • 1 Tbsp Avocado or Olive Oil
  • 1 C. Chicken Broth
  • 1 can Black Beans (any type will work)
  • 1 can Pumpkin Puree (NOT pie mix)
  • 1 can Fire Roasted Diced Tomatoes
  • 1 tsp Chopped Chipotles 
    (Jar from Hispanic Section at Grocers) 

Directions:

  1. Add oil to pot to heat up. Then cook onion, celery and garlic for 3-4 minutes.
  2. Add meat and spices; cook until meat is browned.
  3. Add all other ingredients; simmer for up to 30 min.

For additional carbs, serve with some toasty sour dough bread.
