THE BEST FALL CHILI
- 1 lb. Ground Chicken or Turkey
(Prefer Organic Pasture Raised)
- 1/2 Red Onion (Chopped)
- 3 Celery Stalks (Sliced)
- 3 Garlic Cloves (Minced)
- 1 tsp Cumin
- 1 Tbsp Chili Powder
- 1 Tbsp Avocado or Olive Oil
- 1 C. Chicken Broth
- 1 can Black Beans (any type will work)
- 1 can Pumpkin Puree (NOT pie mix)
- 1 can Fire Roasted Diced Tomatoes
- 1 tsp Chopped Chipotles
(Jar from Hispanic Section at Grocers)
- Add oil to pot to heat up. Then cook onion, celery and garlic for 3-4 minutes.
- Add meat and spices; cook until meat is browned.
- Add all other ingredients; simmer for up to 30 min.
For additional carbs, serve with some toasty sour dough bread.
